Máragogype

Máragogype (Elephant Beans):

Máragogype (also called elephant bean) is a variety of arabica that produces an extremely large, rather porous bean. It is a mutant that spontaneously appeared in Brazil, almost as though the giant of Latin-America thought regular beans were too puny and produced something in its own image. It was first discovered growing near the town of Máragogype, in the north-eastern state of Bahia. Subsequently it has been carried elsewhere in Latin America and generally adopts the flavour characteristics of the soil to which it has been transplanted.

Most experts recognise it as one of the finest coffee beans in the world with the main claim that it en-dowers a much heavier body than a comparable arabica coffee from the same region.  I believe that it produces a fuller body and gives the strong sweat aromas while producing a less acidic cup than other traditional arabica varieties. This strengthens the cup when added in small amounts 5, 10 or 25%. The bean in the green state is not stable and needs to be stored in the parchment to retain the bright green colours, otherwise it tends to whiten quickly but regains it’s consistency when roasted. These problems along with low productivity from the extra large trees has discouraged farmers from replanting Máragogype, and it has become a rather rare, difficult-to-find coffee. Most Máragogypes sold in North America are grown in Mexico, Nicaragua, or Guatemala. Those from Chiapas, Mexico, and the Coban district of Guatemala have the best reputation.

Máragogype is a romantic’s coffee curiosity, and deserves respect on that ground alone. We have been sourcing Máragogype in Los Altos de Chiapas,  and have localised a number of Organic Certified Estates. For those aficionados who want the impressively soft and full cup obtained from the dramatically large bean we can supply now in quantity. We however still recommend to blend the márago with our High Grown Arabica Typica to give a more consistent cup quality,

We have included máragogype in our Gourmet blend and Premium blend for the last two years with success. We have now  localised sufficient sources which give +84 SCAA rating  to be able to export in containers.

Natural Coffee

Natural Coffee:

BLUE BAG COFFEE is working with Natural sun dried coffee. This is Arabica coffee from high altitude above 1200m and goes through a dry process instead of the wet process of breaking the cherry shell and fermenting the fruit to give the parchment – which is then sun dried. The natural coffee is picked when ripe and placed on patios to dry and forms a dry cherry (cerezo o chibola). This cerezo becomes hard and dry but needs to be uniform in colour (normally a dark yellow-red )and consistency. It also needs to dry on a cement patio and not on the ground as otherwise it tends to pull in the earthy (soily) aromas as it dries and this produces a sour/bitter taste to the coffee. The left over or unripe porcions of the wet process also produce chibola with a very acidic and bitter taste. The cerezo is very hard and needs two passes on the dry processing hulling machines which need to be ajusted precisely to take advantage of this fine coffee.

BLUE BAG COFFEE specialises as an artisan coffee roaster in San Cristobal de las Casas, Chiapas.  Our coffee comes from Los Altos de Chiapas and we select  SHG and best SCAA speciality coffees from the area.

We roast in small batches at the high altitude.  This assures you of a more even and subtle  roast as everything takes longer to cook at high altitude.  Our largest roasters are only 70kgs or one sack of green coffee. We roast each sack individually and let it rest before blending. We roast everyday but rest our fresh roast for 2-3 days before bagging. We recommend grinding just before use.  We choose to work with individual customers so we can focus on both our customers and our coffee. We can help our customers make good coffee and show them how to make more profits on better quality coffee.

We do not offer any coffee or espresso equipment for our wholesale customers to use.  Rather, we continue to put our resources into better product (green coffee) and education.  This will guarantee our customers a better, more consistently superior product.

We offer the same, superior product whether you buy from us retail or wholesale.

We can help with barista training for those interested in entering the coffee business or just for the home enthusiast at our facility.   We can set up SCAA tasting courses. We can also sell commercial and home espresso and coffee equipment, either new or refurbished.
