About Blue Bag Coffee

Blue Bag Coffee is a family owned roastery and Coffee processor, now with our first Coffee shop open. We only work with speciality quality Coffee.

We are located in the beautiful, picturesque town of San Cristóbal de las Casas, Chiapas, México. Blue Bag Coffee was inspired by a dream to put 4 unique grains of coffee together which sent me on to Chiapas on a mission to learn about coffee. By exploring and the experience of more than 30 years of teachers who offered their advice in the coffee business, we are now roasting one of the best blends available. We mix Máragogype with Pantelho, Jaltenango and Pocolum high altitude Arbica.

We work closely with these coffee plantations in Chiapas, Mexico. We only pick the highest quality beans organically certified from our coffee providers.

All our coffee is natural shade grown high altitude above 1100m and most of our coffee comes from Strict High Grown (SHG) areas above 1400m. We only work with Arabica beans of specialty quality with SCAA rating above 84, 90% of these beans are Arabica Tipica and the rest are Arabica Bourbon, Arabica Caturra and Arabica Catuai.

We also specialize in Arabica Máragogype which is an extra large arabica bean of very high quality considered one of the best beans in the World. We blend everything with Máragogype to improve aroma, body and control acidity.
